Pork Tenderloin Asado


In this recipe you marinate and grill a butterflied pork tenderloin.  I switched from serving  marinated beef flank because pork tenderloin surpasses beef flank in flavor, succulence, and price per pound. This is a great dish for serving a large group because it’s economical, cooks really fast, is so flavorful and has great presentation qualities.

Pork Tenderloin Asado Grilled

Ingredients

2 Pork Tenderloins butterflied and pounded out  (Total 2 to 2 ½ lbs)

Marinade :

1 cup white onion sliced in half rings

1 cup cilantro roughly chopped

¼ cup fresh oregano leaves chopped

4 cloves garlic minced

2 lemons juiced then roughly chopped

4 cloves garlic minced

¾ cup soy sauce

¼ cup olive oil

1 teaspoon salt

½  teaspoon pepper

Serves 6 to 8

Preparing the Meat

Butterfly each tenderloin or have your butcher do it for you.

Cover with plastic wrap and gently pound to flatten. The purpose is to have uniform thickness which makes for even cooking.

 

Pork Tenderloin Asado Marinade

Marinade:

Place the tenderloin in a 10 x 13 casserole dish and pour the marinade over the meat.  Cover the dish with plastic wrap and refrigerate 4 to 6 hours. Turn the meat over 3 to 4 times while marinating.

Grilling

Heat your outdoor grill to 400 degrees and grill the meat for 6 minutes on one side, turn the meat over and grill another 4 minutes.  Rest the meat for 5 minutes before serving.

This meat is also great shredded into strips and put in flour or corn tortillas for tacos with a good salsa.

  5. What about that maranade? It looked to good not to use it afterwards in the meal.

    • If you put your mind to it, go develop a cocktail mix by modifying this marinade, probably for tequila.
